At the heart of VEx – The Vietnam Experience is Yen Collman, whose life story and deep connection to Vietnamese culture shape everything we do. Born and raised in Vietnam, Yen brought her heritage with her when she came to the United States in 2004, beginning her journey in San Francisco, California, before calling Forest Grove home in 2022. Her passion for food, culture, and community is woven into every detail—from menus rooted in tradition to an atmosphere that reflects the warmth, grace, and quiet confidence of Vietnamese hospitality.
For Yen, food is more than nourishment; it is memory, story, and connection. Through her vision and leadership, VEx becomes more than a restaurant and bar—it is a living expression of Vietnam’s soul, thoughtfully shared with every guest who walks through the door.
